As most of us are probably trying to be good this month & stick to our January diets, our Empire Chicken & Artichoke Salad recipe is quick, easy, healthy & ohhh so tasty!
Ingredients:
Mixed lettuce leaves
Chicken breast
Red Onion
Artichoke
Pumpkin seeds
Olive oil
Garlic
Thyme
Cherry tomatoes
Salt & pepper
Fresh lemon juice
Method:
Marinate your chicken breast in fresh lemon juice, olive oil & thyme and cook in a pan.
Add your mixed leaves to a bowl & top with sliced red onion, artichoke & pumpkin seeds.
We cook our sun blushed cherry tomatoes slowly for 3 hours in a very low oven with olive oil garlic & thyme to get their exclusive taste, however, to make a quick yet tasty alternative simply gently fry the marinated tomatoes for a couple of minutes in a pan and add to the bowl.
We finish the salad with a light dressing of freshly squeezed lemon, a touch of olive oil, salt & pepper.
Slice your chicken breast, place around the outsides of your salad & Enjoy
