STEAMED SEA BASS IN 7 MINUTES!
This month’s recipe of the month comes from our delicious Pan-Asian restaurant, Restaurant 88. Overlooking the Atlantic Ocean in the fishing village of La Caleta, Restaurant 88 is the perfect place to enjoy an evening out. Our top chef Jay Shi has designed a delicious, healthy & easy to make steamed sea bass recipe you can make at home in just 7 minutes for those evening when you can´t make it out, here´s how:
Ingredients:
1 sea bass fillet, scaled, gutted, and scored with a sharp knife down to the bone, seasoned with Salt and freshly ground black pepper.
1 spring onion
7g finely chopped ginger
25ml soy sauce
half tbsp peanut oil
Dash of sesame oil
Pinch caster sugar
dash rice wine
Method:
1) Put the fish in a shallow heatproof dish. Season lightly with salt and pepper, top and bottom. Disperse the spring onions and ginger on top.
Combine the soy sauce, peanut oil, sesame oil and sugar in a bowl. Pour the mixture over the fish.
2) Set a roasting rack in a large roasting pan. Fill the pan with water that comes up below the rack. Set the pan over 2 burners and bring the water to a boil. Set the baking dish with the fish on the rack, reduce the heat to a simmer, and cover the roasting pan tightly with foil. Steam the fish until a small knife or skewer can be easily inserted into the thickest part and the fillet comes off the bone fairly easily, 6 to 7 mins.
