In this months recipe we are going to show you how to make piri piri chicken! This famous recipe originates from Portugal and as a result has become a BBQ favourite. Our recipe is for 4 people. Medium heat with 8 pieces. We recommend an assortment of chicken thighs and legs for this dish.
INGREDIENTS:
8 x chicken pieces
250-mil olive oil
1 whole red pepper and 1 whole green pepper
3 x cloves of garlic
2 x small fresh red chilies / guindias
200 grams worth of breadcrumbs and 200 mil of white wine vinegar.
Salt and pepper you’re chicken then let your chicken pieces come to room temperature.
Chop & de-seed your peppers, peels you garlic cloves and then place in a blender along with all other ingredients. Blend until you get a smooth saucy paste.
Brown off your chicken on the hot BBQ roughly two minutes either side. Once brown, start brushing on thick your mix over the chicken pieces whilst turning every 60 seconds. Cook the chicken through constantly turning and brushing on your piri piri sauce. (Takes roughly 15 to 20 minutes)
Serve, enjoy and receive some heavy patting on the back.
