Ingredients: half bottle of “old speckled hen” ale, 500 grams of plain flour, 250 ml of sparkling water, 70 grams fresh yeast, salt and pepper (to your preference) but we use 2 x flat tea spoons of each.
How to prepare: This batter recipe shows you the steps for empire´s famous fish and chips. It is best used to coat cod however can be used for haddock, sausages and chicken breast strips. First grab a large mixing bowl and pour the ale in, now feel free to grab the rest of the ingredients and pour into the ale all at once. Whisk all the ingredients for roughly 2 minutes ensuring there are a few small lumps making for better crunch. Once whisked leave to stand in a warm place for an hour! Your empire batter is now ready to be used for frying. (Note: if your using fish always make sure to dip the fish in flour prior to the batter)
