This month we have chosen one of our most popular starters from our boutique restaurant, Restaurant 88 in La Caleta, our 88 Thai Seafood patties. These are great as a starter, or can also be served up with rice or salad for a tasty meal. Here´s how you can make a similar version at home.
88 THAI FISH CAKES
500 grams cleaned squid (its called choco or sepia in Spanish)
200 grams king prawn de-shelled and tailed
Pinch of salt
Tea spoon of root ginger
½ bunch of fresh coriander
1/2 freshly squeezed lime (juice)
Dash of white pepper
1 egg
Vinaigrette
1 part Thai fish sauce
1 part white wine vinegar
Fresh chili (to taste)
Sprig of coriander
½ clove garlic
Fish cake method
Add all ingredients into a blender and mix until you have the consistency of a thick paste. Empty the mixture out and portion out into small round patties approx. 5cm in diameter not too thick.
Heat oil in a pan and deep-fry the patties for a few minutes until golden brown. Serve with fresh lime wedges and extra coriander.
For the vinaigrette
In a mixing bowl add the fish sauce and white wine vinegar,
dice the garlic, coriander and chili then add to the bowl. Stir well and refrigerate for 1 hour to allow the ingredients to fuse.
