As the sunshine now looks set to stay we thought we´d treat you all to a tasty treat this month and let you into our Empire Vanilla Cheesecake recipe. This tasty desert is sure to brighten anyone’s day, so here’s how you can make a similar version of our much-loved Classic dessert at home.

60 grams cream cheese
50 mls whipping cream
30 grams caster sugar
Hint of vanilla powder
50mls whipped cream
100 grams digestive biscuit
55 grams butter
10 grams smashed almonds
Fresh strawberries
200 mls water
200 grams sugar

To poach the Strawberries boil 200mls of water together with 200 grams of sugar & bring to the boil. As soon as the water starts to boil add your sliced fresh strawberries then straightaway remove from the heat. Allow the pan to cool and drain the strawberries from the syrup.
To make the biscuit base smash up 100 grams of digestive biscuits and pour over 55 grams of melted butter and mix together well. Flatten the biscuit base to the bottom of your cake mold.
To make the creamy cheese mixture mix together 60 grams of cream cheese with 50mls of whipping cream, 30 grams of caster sugar and a hint of vanilla powder. Whip all ingredients together then fold in an additional 50mls of whipped cream.
Add mixture into a pipe mold and squeeze over your biscuit base, add the poached strawberries to the top and leave in the fridge to set for approximately 1 hour, then enjoy!
