Venture Group was proud to attend the 7th edition of the GastroCanarias festival that takes place every year in the island’s capital city of Santa Cruz. After a Covid-induced hiatus the event was back in 2022 aiming to promote and celebrate Canarian cuisine through workshops, stalls, master classes, cooking shows and product tastings with more than 19,000 industry professionals attending over the three days.
Venture Group took to the Heineken Stage on the 27th of October to introduce the Venture Collections brand and to share some of the magic that makes these venues so very special.
We started by presenting Kensei Contemporary Japanese in the company of its head manager, Stefania Giordano, before introducing Lagarto, our French and Belgian brasserie concept. Then it was the turn of Char Fuego Y Brasas in the shape of our Master of Fire – Chef Babacar who was the main attraction of this session.
Narrating as he worked, Chef Babacar provided a masterclass in live show cooking as he produced some of Char’s best loved dishes using real fire and ember cooking and premium steaks supplied by our very own butcher, Meat Boutique.
Chef Babacar demonstrated some of the skilled culinary techniques that make this restaurant one of the most exclusive in the south of Tenerife including the creation of one extremely delicious steak tartare. It really was a first-class display which certainly got the attention of the audience.
He also took the time to explain about the meats for which Char is famous including the high-end cuts of Luismi, Goya and Wagyu as well as demonstrating how he uses the Josper Oven to finish the restaurant’s meat to perfection.
Babacar also demonstrated that meat wasn’t the only thing on the menu and showed the versatility of the Josper to also impart deep flavours into both vegetables and fish.
